First of all, HR needs to be involved. A company that does not, that has an HR department as the supervisor mentioned but not involve them is trouble. The employee should have been given a job description with the new duties and the title that might have helped the employee accept the changes and a slight increase would have been better for the employee as well.
Job enlargement like they did without giving the employee additional pay is a demotivator and you really are going to have problems in the long run if you do that.
